caviar anyone?

yes, i actually DO like caviar (i know, i know, i have expensive taste).  i’m not well versed in the caviar world but what i have had has been really good. here’s a new twist on caviar for ya. it’s actually one of my favorite little dishes to make and it’s great for parties!

Texas Caviar


  • 1/2 onion, chopped
  • 1 green bell pepper, chopped
  • 1 bunch green onions, chopped
  • 2 jalapeno peppers, chopped – don’t forget your gloves or you will have hands-o-fire!
  • 1 tablespoon minced garlic
  • 1 pint cherry tomatoes, halved
  • 1 (8 ounce) bottle zesty Italian dressing
  • 1 (15 ounce) can black beans, drained
  • 1 (15 ounce) can black-eyed peas, drained
  • 1/2 teaspoon ground coriander – if you can’t find this spice, then you can leave it out, no biggie.
  • 1 bunch chopped fresh cilantro


  1. In a large bowl, mix together onion, green bell pepper, green onions, jalapeno peppers, garlic, cherry tomatoes, zesty Italian dressing, black beans, black-eyed peas and coriander. Cover and chill in the refrigerator approximately 2 hours. Toss with desired amount of fresh cilantro to serve.

love love love this “salsa.” make sure you serve it with Scoops tortilla chips. also try it on a hamburger, yummy! you’ll see why it’s called texas caviar when you make it. remember, everything’s bigger in texas, especially the hair! 🙂
