The Flying Biscuit Organic Oatmeal Pancakes

2 cups organic rolled oats

2 cups nonfat buttermilk

2 large eggs, lightly beaten

4 tablespoons unsalted butter, melted and cooled

1/2 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

Canola oil for griddle

Combine oats and buttermilk in a large bowl. Cover and refrigerate for 2 hours, or overnight. Add eggs and melted butter to oat mixture. Sift together flour, sugar, baking powder, baking soda, cinnamon and salt. Add to oat mixture. Preheat griddle. Spread out batter with the back of the ladle. When bubbles appear, gently flip cakes and cook until golden brown, about 5 minutes per side. Serve hot. This recipe make about 20 pancakes, serving 6-8 people.

What is an Otterball

    Better yet, WHO is Otterball?

Otterball since 2003

Otterball is a web design company that Jason designs for and a good friend of ours, Paul started. I’m somewhat invested, as you can tell! 🙂 I’m am so excited about how well they are doing and we’re thrilled about the progress that the company is making. They recently released Dave Barnes new website and are working on projects with Music City Unsigned, Yale Music Scene, and ScreenSurge. Right now you can find us at www.otterball.comYelpFacebook, and we’re working on a Myspace. Feel free to peruse around the sites and give us your thoughts. Pass the cool stuff you find along. We all need a little plug every now and then right?  ENJOY!

Christmas treats

Today I made the cutest and easiest Christmas treat! It’s great to give your co-workers because you can make a lot at one time.  Here’s what you need:TwizzlersDipping white chocolate (the kind you usually use on strawberries and the kind that hardens) Sprinkle (for Christmas I got green & red)Wax paperThis literally took me 10 minutes to do a family size bag of Twizzlers. So, the kind of dipping chocolate that I got comes in a cup that you can microwave. I would recommend this. It was near the baking stuff at the grocery store. Dip each Twizzler  about 1/3 of the way into the chocolate and place on the wax paper. Make sure they don’t touch. Oh but before you do this, sprinkle some sprinkles 🙂 down on the wax paper first so that you have decor on the bottom 🙂 So, dip them, then put them down on the paper, then sprinkle the other side. Then all you have to do is let them harden. How easy is that? I’m going to put them in those little cellophane baggies and tie them off with ribbon. What a cheap and easy gift!  Here’s where the idea originated from: Betty CrockerMerry Christmas!
